Crockpot Lasagna

Crockpot Lasagna

 
This is a receipie that my kids love to eat, but constantly tell me stinks!! lol I love Lasagna, but what I love about this, is you throw it in the crockpot and forget about it.
 
 
Ingredients:
 
1 ¼ lb hamburger
4 cups chicken broth
1 (28 oz) can petite-diced tomatoes
1 (18 oz) can recipe starter’s fire-roasted tomatoes cooking sauce
6 cloves f garlic (I only used 3)
 

1 white onion diced (my kids had no idea)
1 tsp dried thyme
1 tsp oregano
1 bay leaf
6 oz dried lasagna noodles broken into small pieces (I used 16 oz)
Salt & pepper to taste
**optional** ricotta cheese/parmesan cheese) to garnish
 
 
 
 Directions:
Add uncooked meat, chicken broth, tomatoes, tomato sauce, garlic, onion, oregano, thyme, and bay leaf to the slow cooker, and stir to combine.
 

Cook on low 7 hours
Stir in lasgna noodles, then cover and cook additional 30-45 min. or until noodles are cooked. Season with salt and pepper to taste.
Remove from heat and serve warm.

Taco Salad night with POKE cake!!

Taco Salad

 
We went easy tonight, and had taco salads. One of my favorite parts of this dinner, is everyone gets to make their own!
 
Ingredients:
 
2lbs Hamburger (we do 2 lbs just because we like leftovers)
 
Taco Seasoning (2-1 for each pound of meat)
 
Lettuce (shredded)
 
Tomatoes (chopped in fine pieces)
 
Cheese (grated)
 
Sour Cream
 
Nacho Cheese Doritos
 

 
 
 
Brown your meat. Drain the fat. follow the instructions on the seasoning packet. Once you have your meat ready, you are ready for dinner. Drake (4) only eats the Doritos! Sean (6) likes Meat, lettuce, tomatoes, and cheese. McKayla (8) Likes everything but sour cream.
 
This is my plate... Doritos on the bottom, then lettuce, seasoned meat, tomatoes, cheese, and topped with sour cream.
 

 
 
Now on to Dessert. My hubby and I love this cake. I thought we were going to have to fight the kids to get some, but none of them liked it... My kids are CRAZY. This is by far, my favorite treat. Like and sweet.
 
Poke Cake
 
 
Ingredients:
 
White Cake Mix
 
Tooth picks/ Fork
 
Jello (we used strawberry)
 
Cool whip
 
 
First things first. Bake the cake according to the directions, and let cool. Once the cake is cool, poke holes all over the cake. Newt mix the jello. I used 1 cup boiling hot water, mix until dissolved, then add in 1/2 cup of cold water. Once mixed, dump all over the cake.
 

 
I used the spatula around the edges to loosen the cake. Next cool the cake for 30 min or so in the freezer. Last step is to use the cool whip like frosting. Now eat and enjoy!!

Chicken & Ranch Rigatoni

Chicken & Ranch Rigatoni

 
Ingredients:
 
2 cups of Cooked (chopped or shredded) chicken
 
8 ounces of Pasta (I used Rigatoni)
 
1 tbsp butter
 
1 tbsp flour
 
2 tbsp dry ranch dressing mix
 
2 cups milk
 
1 cup of shredded cheddar cheese (I am using fiesta blend since we have it)
 
1/3 cup cooked, chopped bacon (I am using bacon bits because we have them)
 
 
I found this one on pintrest, and had it pinned in several versions, so I just customized it to match what we have in the refrigerator. In the crockpot I have my chicken cooking. And since I don't have Chicken broth, I made my own!!
 
 
Closer to dinner time, I will cook the pasta, so that I can mix it all together!!
 
 
Directions:
 
Cook Pasta according to the box and set aside. Melt the butter, add the flour and stir, whisk in the milk, and let the sauce thicken. Stir in the ranch mix and cheese until the cheese melts. Add the Chicken, Bacon and pasta.. stir to coat and its ready to serve!
 

UPDATE!!!

 

 
My Kids LOVE IT!! They all have asked for seconds!! I added a little more flour to the mix to thincken it up, but this one is getting the best reviews at my house!! I think it will go on the list of regular items!!

Crockpot Chicken and Dumplings

Crockpot Chicken & Dumplings

 
 
I have only made Chicken and Dumplings once before, and it was a casserole, but considering all the kids loved it, I figured I would try to make it in the crockpot!
 
 
Ingredients:
 
3 boneless, skinless chicken pieces (large)
 
1 table spoon of butter
 
1 small can of cream of chicken soup
 
1 can of refrigerated biscuit dough (set aside for now)
 
1 can of corn
 
1 tsp of cumin
 
1/2 tsp pepper
 
sprinkle of Cayenne Pepper
 
1/2 tsp onion powder
 
1 cup of chicken broth
 
pinch of salt
 



 
 
Mix everything but the biscuits in the crockpot. Cook on low for 3 hours. cut up the biscuits in small pieces like 1/4's. Drop them in and let cook additional 2-3 hours.

I think that is how I would describe my cooking style of cooking at this point, Like a child playing with mudpies. I don't know have the "gift" as I call it for cooking. I like to cook, and I do try to cook, but I am nothing like my dad or husband, who can walk over, look at something, and know just what to add to fix it! I have recently fallen in love with my crockpot, and most of the cooking that I do will involve the crockpot.
 
I have 4 kids, 3 of which will have to eat my cooking each night, and give me feedback. McKayla is 8, Sean is 6, and Drake is 4!

Tonight we are cooking POT ROAST!!

 
 
Ingredients:
Beef Chuck pot roast (boneless)
Carotts
Golden Potatoe's
Beef Bouillon
Onions
Lipton soup mix
 

 
I took pictures to show you what I am working with, and to show you how mine looks!! I made the broth with the Beef Bouillon and water, poured it in the crockpot. I thn put the pot roast in the crockpot, and sprinkled over the onion soup mix.

Next I choped up 2 onions in fairly large pieces, as well as about 7 potatoes and 2 pounds of carotts (my kids love cooked carotts) and shoved as much of them in the crockpot as possible. I put the lid on the crockpot and turned it on low!!
 

 
I forgot to take the after picture, but it turned out really good. Really full of flavor. McKayla said she liked the meat, but all she ate was the carotts. she had several helpings of carotts. Sean loved the meat, and Drake wouldn't even try it. My husband I both enjoyed it.
